Chilli, Poached Egg, Avocado on Toast

Serves 2

A breakfast packed full of healthy fats, wholegrains, iron and protein, this will kick start your day!

Ingredients
  • 2 eggs2 tomatoes1 avocado4 slices of wholemeal/wholegrain bread
  • 1 tsp of chilli flakes
Method
  1. Boil water in a saucepan.
  2. Once water is boiling, swirl the water around using a spoon.
  3. Drop in the eggs. Boil for up to 4 minutes (longer is you want the egg to be harder).
  4. Chop tomatoes in to small pieces.
  5. Slice avocado in half, break open and remove the stone.
  6. Scoop the flesh out of the avocado into and bowl and mash.
  7. Toast the bread.
  8. Top toasted bread with avocado, chilli flakes, tomato and eggs.
  9. Enjoy!
