A breakfast packed full of healthy fats, wholegrains, iron and protein, this will kick start your day!
- 2 eggs2 tomatoes1 avocado4 slices of wholemeal/wholegrain bread
- 1 tsp of chilli flakes
- Boil water in a saucepan.
- Once water is boiling, swirl the water around using a spoon.
- Drop in the eggs. Boil for up to 4 minutes (longer is you want the egg to be harder).
- Chop tomatoes in to small pieces.
- Slice avocado in half, break open and remove the stone.
- Scoop the flesh out of the avocado into and bowl and mash.
- Toast the bread.
- Top toasted bread with avocado, chilli flakes, tomato and eggs.
